I made these chimichangas one night after realizing that I had all the ingredients on hand and we had just had enchiladas for dinner. I went for it. And they were awesome!

They said you could refrigerate them and rewarm them the next day or so and they were ok but were best right after being made with some vanilla ice cream…mmmmmmmm
